Cooking Beef to Get Juices for Gravy

A hearty roast dinner is a real winner in our home. I LOVE to use my slow cooker recipes, and recently have been cooking a lot of slow cooker roast beef as my whole family enjoy it. Once the beef is finished there is a pot full of lovely beef juices, and beef dripping, and so I love to turn this into a homemade beef gravy and this beef gravy recipe is the best I've EVER made!

If you've got homemade beef stock / beef broth then this is going to be super cheap, and easy. You can also use stock cubes, or bouillon powder instead.

Follow my method to make the use of all those tasty pan juices when you've cooked a roast beef. The stock that I use in this recipe was all made in my slow cooker, while the beef joint was cooking with carrots and parsnips.

If you've cooked your beef in the oven you're going to have a lot less pan drippings, and will want to either use more water or more stock to stretch this recipe to make a similar quantity of gravy. This will still make a lovely brown gravy, so don't be disheartened!

Ingredients for beef gravy recipe:

Beef juices (I had 500ml)

Plain flour

Stock cube

Cooked sage and onion stuffing balls decorated with sage

Method for making homemade gravy with meat juices:

Add two tablespoons of beef juice and two tablespoons of plain flour to a saucepan.

Place on to a low heat.

Mix well until combined and cook for a minute. This is your beef version of a roux.

Crumble in one beef stock cube.

Mix.

You'll have a very thick brown beef paste.

Gradually add the beef juices to your mixture, slowly, and stir frequently to ensure you don't get any lumps.

Once combined you'll want to cook over medium heat until the mixture bubbles.

Then turn down and simmer until it thickens up.

That's it – enjoy your delicious thick, rich gravy!

Can you freeze this gravy?

Absolutely! I would recommend you make it, leave it to cool and then freeze in an airtight container, leaving about 1/3 of the container to allow for any expansion that may happen.

Can you make this gravy ahead of time?

Yes! Again, make it, leave it to cool and then when you want to serve it just warm it through for a few minutes on the hob. This will help it thicken up again a little and it'll be just as delicious!

What herbs go nice?

When I place my beef in to cook it's typically dressed with onion powder, garlic powder, a bay leaf or two and thyme.

Do you need homemade stock for beef gravy? Want to make gravy without homemade beef drippings?

While I do believe homemade stock is absolutely delicious, and a highlight in this recipe, if you don't have the time or effort to make this then you can just use a stock cube, such as Bisto, or you can even buy a portion of homemade stock from your local butcher or supermarket.

Can you use gravy granules?

If you want to skip a step, or save a little time, then you can take your beef stock, homemade or otherwise, and just heat it up and then slowly stir in some Bisto or other gravy granules. This is a great way to use up a homemade stock if you've made a slow cooker roast beef.

Want to make this a little more special?

You can add in a splash or two of red wine. This will bring a little extra depth to the flavour.

Another thing that I LOVE to do is to add a 1/4 tsp of Marmite. This brings some extra flavour, and is always a winner in my home!

A few drops of Worcestershire sauce is another delicious addition! But pick ONE, don't add them all of you'll just overpower your beef gravy.

Not sure what to do with leftover beef gravy?

If you leave it to cool and then mix in a little greek yoghurt you can make a thick base for pasta, pies or even just spreading on to sandwiches with beef for a tasty beef sandwich that won't go soggy.

This is also delicious served over buttery mashed potatoes! I love to make air fryer mashed potatoes, as they're quick. The perfect comfort food!

Want to make a gluten free gravy?

You absolutely can! Just use your favourite gluten free flour blend, and then check the ingredients of the stock cube of course.

Can you use cornstarch instead?

Yes, cornstarch would work fine. Personally I find plain flour just convenient, as I always have it close to hand in my pantry.

An easy beef gravy made with beef drippings

Prep Time 5 minutes

Cook Time 10 minutes

Servings 3 servings (125ml)

Calories 70 kcal

  • Beef juices I had 500ml
  • 2 tablespoons of plain flour
  • 1 stock cube
  1. Add two tablespoons of beef juices and two tablespoons of plain flour to a saucepan.
